Truth be told, a long time before Joey and I ever knew we’d be together we would talk all the time about his fitness and his diet. He said he eats boring food like, “Egg bites, veggie shakes, and protein bowls.”. I did not envy him. It’s safe to say that up until recently my dinners consisted of Flamin’ Hot Doritos toppped with smooth cream cheese from Croatia and topped with Russian caviar. I ate like a complete bachelor. Living on snacks. Taquitos for breakfast? Why not? I’m grown.
Flash forward to the last two weeks of my life and this is what I eat now. Egg bites. Veggie shakes. Protein bowls. I’m sure you’re asking what a protein bowl is. It’s this.
Riced cauliflower topped with sauteed and seasoned ground meat topped with guacamole topped with hot sauce. I eat this every day. Surprisingly, everything is delicious (except the veggie shakes).
